EASY EGGPLANT 
1 lg. eggplant, peeled & sliced
1 c. water
1 egg
Cracker crumbs

Cover and boil eggplant about 5 minutes. Drain well. Mash with potato masher. Stir in egg. Add cracker crumbs until can be made into cakes. Fry in lightly greased skillet until well browned. Serve at once.
