APRICOT DELIGHT SALAD 
1 big or 2 sm. boxes apricot gelatin (Jello)
2 c. hot water
2 c. cold water
1 (No. 2) can crushed pineapple (reserve syrup)
2 sliced bananas
2 c. miniature marshmallows

Mix all of the above ingredients and congeal.

TOPPING:

1/2 c. pineapple syrup
2 tbsp. flour
3/4 c. sugar
1 beaten eggs
8 oz. cream cheese
1 (8 oz.) Cool Whip

Mix together and cook until thick. Add 8 oz. cream cheese while hot. Beat until smooth, let cool. Fold in one container of whipped topping. Spread on congealed salad. Sprinkle with coconut.
