2 sm. or 1 lg. pkg. Jello (lemon or favorite flavor) 2 c. hot water 2 c. cold water 2 sm. or 1 lg. can crushed pineapple, drain and save juice 4 sliced bananas 2 c. small marshmallows Make Jello and let set until firm. Add drained pineapple, bananas and marshmallows, folding in carefully. Chill until firm. TOPPING: Juice from pineapple plus water to make 2 cups liquid 4 tbsp. flour 1 c. sugar 2 eggs, beaten Dash salt 1 med. container Cool Whip Grated cheese, Colby or favorite In saucepan, beat eggs slightly; add sugar, flour and salt. Mix well. Gradually add pineapple and water mixture, mixing well. Cook over medium heat, stirring constantly, until thick. When consistency of instant pudding, remove from heat and cool, stirring occasionally. When completely cool, fold in Cool Whip. Spread over cold Jello and sprinkle with grated cheese. Use 9x13 baking dish for best results. |
