BANANA SALAD 
1 c. pineapple juice
Juice of 1 lemon
Juice of 1 orange (1/3-1/2 c.)
2 eggs, beaten
1 c. sugar
2 tbsp. flour
Bananas
Crushed peanuts

DRESSING: Put eggs, sugar and flour in top of double boiler. Gradually stir in the juices until no lumps are present and all dressing ingredients are combined. Cook until thickened. Cool. (This may also be prepared easily in the microwave.)

SALAD: Alternately layer sliced bananas and dressing bowl. Top with crushed peanuts.

Since microwave ovens vary in power, you may need to adjust your cooking time.
