MOM'S GREEN PEPPER STEAK 
1 lb. round steak, fat trimmed
1/4 c. soy sauce
1 clove garlic
1 1/2 tsp. fresh grated ginger (or 1/2 tsp. ground)
1/4 c. salad oil
1 c. green onions
1 c. green peppers, cut into 1-inch squares
1 tbsp. cornstarch
1 c. water

Cut beef into small pieces. Combine soy sauce, garlic, ginger and add beef. Set aside while preparing vegetables. Heat oil in large frying pan and brown beef. If not tender, cook longer. Mix cornstarch with water. Add to vegetables and beef. Cook together. Serve over rice. Serves 4.
