BEEF WITH GREEN PEPPERS 
1 lb. round steak
4 tbsp. soy sauce
1 tbsp. cornstarch
1 tbsp. red cooking sherry
1 tbsp. sugar
1/4 tsp. MSG (optional)
1 c. sliced onions
4 tbsp. oil
1/2 tsp. salt
2 med. or 3 sm. green peppers

Cut beef across grain 1/2 x 2 inch strips. Mix beef with next 5 ingredients, set aside for 2 or 3 hours.

Rinse pepper, then cut in chunks, discard seeds, and trim off white soft parts. Put 2 tablespoons oil in hot skillet over high heat. Add salt first, then green peppers, stirring constantly until peppers turn darker green, less than 1 minute. Remove peppers and spread on a plate.

In same skillet, add 2 tablespoons oil and onions. Stir in beef mixture and turn constantly until beef is almost cooked, not over 2 minutes. Add green peppers and mix thoroughly. Do not over cook. Serve immediately over rice.
