BAKED BEANS | |
2 lbs. Great Northern beans 2 tsp. baking soda Cover beans with soda with water, soak overnight. 1/2 lb. salt pork, boil, cool & skim 1 c. brown sugar 2 tbsp. molasses 2 tsp. mustard 3 tsp. salt 1 tsp. pepper 1 c. chopped onion Bacon slices Cook salt pork the day before. When cool, cut in cubes. Refrigerate until next day. Save water from cooking salt pork. Drain beans. Cover with salt pork water and boil until tender. Drain beans saving liquid. Mix liquid with sugar, molasses, dry mustard, salt and pepper. In baking dish layer beans, salt pork and onions. Repeat until beans are used up. Cover with liquid. Use more water if needed. Bake, covered at 350 degrees. Bake 3 to 3 1/2 hours. Remove cover, spread bacon on and cook until done. |
