MAINE MASHED POTATO SALAD 
3 lb. red potatoes (from Maine!)
4 large eggs (hard boiled)
1 large cucumber
3/4 cup mayonnaise (Hellmann's or Best Foods)
1 to 2 tbsp. dill (use according to preference)
salt and pepper, to taste

Boil potatoes and mash. Set aside to cool.

Chop cucumber and eggs. Add to cooled mashed potatoes and fold in mayonnaise and dill. Add salt and pepper and enjoy!
