WINTER SQUASH CASSEROLE 
3 lbs. Hubbard squash
1/4 c. onion
1 tbsp. sugar
1 c. saltines
2 eggs
1/2 c. melted butter

Cook fresh squash in microwave. Mash squash. Add all ingredients except 1/2 cup saltines and 1/4 cup butter. Place into 2 quart greased baking dish. Top with the reserved 1/2 cup saltines and 1/4 cup melted butter. Bake at 375 degrees for 1 hour or until brown.

Since microwave ovens vary in power, you may need to adjust your cooking time.
