MASHED SWEET POTATOES CASSEROLE 
2 lbs. sweet potatoes
3 tbsp. butter
2 eggs
1/2 tsp. orange rind
Salt to taste
Nutmeg

Boil sweet potatoes in salted water until tender. Drain, peel and mash. Beat in butter, eggs, orange rind and salt. Spoon into buttered casserole dish. Sprinkle with nutmeg. Bake at 350 degrees for 45 minutes or until golden brown.
