VEGETABLE CASSEROLE 
1 1/2 c. Spanish onion rings
1 1/2 c. thin carrots, bite size, cut lengthwise
2 c. celery, bite size
1/2 c. green pepper, strips
1 med. size can tomatoes or 4 fresh, quartered
1 tbsp. sugar
2 tbsp. salt
Dash pepper
3 tbsp. tapioca
4 tbsp. butter
1 pkg. frozen French style green beans

Combine all ingredients except green beans. Bake at 375 degrees for 1 hour. At the end of the hour, run warm water over frozen beans - drain. Add beans to casserole and continue baking for another hour.

Note: Heat and time can be varied, depending on whatever else is baking, but 1 3/4 hours is minimum. Serves 8-12.
