A SPANISH BREAD PUDDING 
1 loaf of bread
1/2 c. brown sugar
1 c. Cheddar cheese, grated
1 c. walnuts or pecans, chopped or raisins. Or both nuts and raisins.
1 stick butter, melted
1 c. white sugar
3 c. cold water

Break bread into small pieces. Put into a 9 x 13 pan. Sprinkle brown sugar, nuts, raisins and cheese over pieces of bread. Then pour melted butter over it all. In a heavy skillet brown 1 cup white sugar. Add 3 cups cold water slowly, stirring until all lumps are gone. Then pour this hot syrup over the bread mixture. Bake for 10 minutes in 350 degree oven. This dessert will serve approximately 6 to 8.

This is a simple version of the baroque Mexican capirotada, a lenten dish said to resemble the sponges given Christ on the cross. Use french bread, spread butter on it, bake it until you have toast, layer with dried fruits, orange rind, toasted peanuts, and make a syrup with sugar loaves (piloncillo), follow recipe as above, bake for 30 mins, add cheese last 12 mins. Superb if sprinkled with quince or orange liqueur, and if you soak dried fruits in brandy.
