ZUCCHINI BREAD 
3 eggs
1 c. oil
3 tsp. vanilla
2 c. sugar
1/2 c. chopped nuts
2 c. grated zucchini
3 tbsp. cinnamon
1 tsp. baking soda
1/2 tsp. baking powder
2 1/2 c. flour
1 tsp. salt
1/2 c. chopped dates

Blend dry ingredients in a bowl, set aside. In large bowl of mixer, add eggs, oil, vanilla and sugar. Blend well. Add dates, nuts and zucchini. Blend in flour mixture. Turn into greased and floured pans. Bake at 350 degrees for about 50 minutes, until test done.

This freezes well.
