CRUNCHY APPLE COFFEECAKE 
1 pkg. yellow cake mix
1 pkg. vanilla instant pudding mix
8 oz. sour cream
1/2 c. cooking oil
4 whole eggs
2 peeled and thinly sliced apples
2 tsp. cinnamon
1/2 c. sugar
1/2 c. chopped nuts

Beat first 5 ingredients all together for 5 minutes. Top with remaining ingredients. Bake at 350 degrees until pulls from side of pan. Makes 1 very large or 2 smaller coffee cakes.
