MOM'S SCALLOPED CORN 
1/4 c. chopped onion
2 tbsp. butter
10 soda crackers, crushed
1 tsp. salt
Dash of pepper
3/4 c. milk
1 lb. can whole kernel corn (about 2 c. fresh)
2 eggs, slightly beaten
2 tbsp. bacon grease
2 tbsp. chopped green pepper

Heat oven to 350 degrees (moderate). Saute onion and green pepper in butter. Blend in crushed cracker crumbs, salt and pepper. Remove from heat. Add milk, corn, 2 slightly beaten eggs and bacon grease. Mix and pour into 1 quart baking dish. Bake 30 to 45 minutes until mixture bubbles.
