PASSOVER BEEF ROLL 
2 lbs. ground beef
1 tsp. salt
1/2 tsp. pepper
2 eggs
1 pkg. potato pancake mix
3/4 c. matzoh meal
3/4 can tomato and mushroom sauce

Potato pancake mix. Mix with one egg, 1 cup water, 1 tablespoon matzoh meal.

Mix meat with all ingredients, except pancake mix. Mix well together. Roll out 1/2 inch thick. Put potato pancake mix on top. Roll up like jelly roll. Pour remaining tomato sauce over top. Bake at 350 degrees for 1 hour.
