PETITE CHEESECAKE 
Vanilla wafers
2 (8 oz.) pkg. cream cheese
3/4 c. white sugar
1 tbsp. lemon juice
1 tsp. vanilla
2 eggs
1 can pie filling (blueberry, cherry, or your choice)

Beat cream cheese, sugar, lemon juice, vanilla and eggs until creamy. Place 1 vanilla wafer in each foil cupcake liner. Fill each cup 3/4 full. Bake at 375 degrees for 15 to 20 minutes. Top with pie filling. Makes 15 to 18 mini cheesecakes.
