SWEET POTATO BISCUITS 
4 tbsp. sugar
4 tbsp. shortening
1 1/4 c. mashed sweet potatoes, cooked
1 1/2 c. all-purpose flour
4 tsp. baking powder
1/2 tsp. salt

Mix together sugar, shortening and sweet potatoes. Sift together dry ingredients. Add sweet potato mixture to flour mixture and cut in with 2 knives or pastry blender. Turn onto floured surface and knead lightly. Roll to 1/2-inch thickness and cut. Place on a baking sheet and bake at 425°F for 15 minutes, or until lightly browned.
