BANANA NUT BREAD 
2 1/2 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
2/3 c. butter
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
3 or 4 large ripe bananas, mashed
1 1/2 c. ground or chopped nuts

Measure and sift together flour, baking soda, and salt. Cream butter, add sugar. Cream butter and sugar together. Add eggs and vanilla. Stir until thoroughly mixed. Stir in mashed bananas. Fold in nuts. Spray 2 small loaf pans with non-stick cooking spray. Pour in mixture.

Bake in a preheated 325°F oven for 55-60 minutes.

Variation: For pineapple bread, substitute 1 can of drained crushed pineapple for the bananas.
