OLD FASHIONED OATMEAL COOKIES | |
1 c. raisins 1 c. water 3/4 c. butter 1 1/2 c. sugar 2 eggs 1 tsp. vanilla 2 1/2 c. flour 1/2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1/2 tsp. cloves 2 c. rolled oats 1/2 c. nuts, chopped Simmer raisins and water in saucepan over low heat until raisins are plump, 20 to 30 minutes. Drain raisin liquid in measuring cup, add enough water to make 1/2 cup. Mix butter, sugar, eggs and vanilla. Stir in raisin liquid. Mix flour, baking powder, soda, salt and spices; blend in. Add oats, nuts and raisins. Drop by teaspoonful about 2 inches apart on ungreased baking sheet. Bake 8 to 10 minutes at 400 degrees. Makes 7 dozen. |
