BUTTERSCOTCH YAMS | |
6 med. yams, cooked, peeled and quartered or 2 cans (17 oz. each) yams, well drained 1/2 c. light corn syrup 1/2 c. firmly packed brown sugar 1/4 c. heavy cream or half and half cream 2 tbsp. butter 1/2 tsp. salt 1/2 tsp. cinnamon Arrange yams in single layer in 13 x 9 x 2 inch baking dish. Bake in 325 degree oven 15 minutes. In heavy 2 quart saucepan combine remaining ingredients, stirring constantly, bring to a boil over medium heat and boil 5 minutes. Pour over yams. Bake, basting frequently, 15 minutes longer or until glazed. Makes 6 servings. |
