BROCCOLI CASSEROLE 
3 (8-10 oz.) pkgs. chopped frozen broccoli
2 cans cream of mushroom soup
10 oz. sharp Cheddar
1 med. onion, chopped
1 clove garlic, minced
1 pkg. chicken Stove Top stuffing (6 oz.), prepared according to directions

Cook broccoli until crisp tender, drain well. In large bowl, combine chopped onion, garlic, 1 cup grated Cheddar and soup (undiluted). Place broccoli in casserole dish. Pour soup mixture over broccoli. Spread stuffing on top of the soup mixture. Cover with foil and bake at 350 degrees for 45 minutes. During the last 10 minutes sprinkle the remaining shredded cheese on top and return casserole to the oven uncovered. Serves an army (10-20).
