CHICKEN CASSEROLE BARCAROLE 
4 chicken breasts, skinned, boned & pressed (flattened)
1 jar marinated cocktail onions
2 jars marinated artichoke hearts
Several mushroom caps
Enough dry sherry or white wine to cover

1. Brown chicken on both sides in broiler.

2. Put chicken, onions and juice, artichokes and juice, mushrooms in casserole. Cover with wine or sherry.

3. Bake in moderate oven 1 1/2 hours (325-350 degrees). Serve over rice.
