BARBECUE BEEF 
2 1/2 to 3 1/2 lbs. chuck roast
1 lg. onion, diced
1/2 c. celery, diced
2 tbsp. vinegar
2 tbsp. brown sugar
4 tbsp. lemon juice
1 c. catsup
2 tbsp. Worcestershire sauce
1 tsp. chili powder
1 1/2 c. water
Salt

Put celery and onion on top of raw beef in roasting pan. Combine remaining ingredients and pour over meat. Cover and bake at 350 degrees for 3 to 4 hours, until beef is very tender. Remove meat from roaster; pour off fat and remove bone. Shred with forks while still hot and return to roaster with remaining ingredients. Makes 15 to 20 sandwiches.
