GARDEN VEGETABLES PASTA 
1 tbsp. butter or sesame oil
1 garlic clove, minced
1 onion, chopped
5 c. vegetables, minced (yellow squash, zucchini, bell pepper, corn)
1 c. tomato juice, water, or stock
1/2 tsp. oregano
1/2 tsp. thyme
1 tsp. tamari soy sauce
1 lb. whole wheat ribbon noodles

Melt the butter in a large frying pan or Dutch oven. Saute the garlic and onion for 2 to 3 minutes. Add the minced vegetables and the tomato juice, cover and simmer about 15 minutes, until the vegetables are tender but not too soft. Add the herbs and spices during the last few minutes. (Start boiling water for the noodles during this time.)

While the vegetables are simmering, cook the noodles according to package directions. Pour the vegetables on top of noodles and serve. Serves 4.
