BASIC CREAM PIE 
1/2 c. sugar
3 tbsp. cornstarch
1/2 tsp. salt
2 1/2 c. milk
3 beaten egg yolks
1 tbsp. butter
1 tsp. vanilla

MERINGUE:

3 egg whites, beaten
1/4 c. sugar
1/2 tsp. cream of tartar (optional)
1 (9-inch) baked pie shell

Combine first 4 ingredients in double boiler. Cook until slightly thickened. Add small amount of hot mixture to egg yolks and return all to hot mixture. Cook until thickened. Stir in butter and vanilla. Pour into pastry, cool.

Beat egg whites to soft peaks, gradually add sugar and cream of tartar. Beat to stiff peaks. Spread on filling. Bake at 425 degrees for 5 minutes until lightly browned.

For chocolate, add 2 squares unsweetened chocolate when adding milk.

For bananas, add 3 sliced bananas before pouring into pastry shell.
