JAZZY YAMS 
4 lbs. yams
1/2 c. butter, optional
1/2 c. bourbon
1/3 c. orange juice
1/4 c. brown sugar
salt to taste
1/2 tsp. apple pie spice
1/2 c. chopped pecans

Boil scrubbed yams until tender, about 35 minutes. Drain and cool. Peel. Mash yams and add all remaining ingredients except pecans. Beat until smooth. Pour into a buttered 6 c. baking dish and bake 45 minutes at 350°F. Sprinkle with nuts.

Serves 8.
