MANDARIN TURKEY 
1 (12-14 lb.) turkey
2 tbsp. butter
1/2 c. sliced almonds
1 (11 oz.) can mandarin orange segments
2 c. cooked rice
4 tsp. soy sauce
Salt and pepper to taste

Preheat oven to 325 degrees. Rinse turkey with cold water. Pat dry with paper towels. Melt butter in saucepan. Saute almonds until crisp, about 3 minutes. Set aside. Drain oranges, reserving liquid in small bowl. Add enough water to liquid to measure 1 1/2 cups. Blend in rice, soy sauce, and salt and pepper. Add almonds, orange segments, and remaining liquid; stir lightly. Stuff the mixture into the turkey cavity. Truss turkey and rub skin with butter. Place turkey on a rack, breast side down, in shallow roasting pan. Roast for 2 hours, basting frequently. Turn breast side up. Continue roasting, basting frequently, for another 1 1/2 to 2 hours.
