YEAST BUTTERMILK NUT WAFFLES 
The combination of yeast and rising ingredients with buttermilk creates a light and crispy flavorful waffle.

1/2 pkg. (1 1/4 tsp.) dry instant or regular yeast
1/2 tsp. sugar
2 tbsp. lukewarm water
2/3 cup all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. sugar
3 eggs
3 tbsp. vegetable or corn oil
1/2 tsp. vanilla (optional)
2 cups low-fat buttermilk
1/2 cup finely chopped walnuts or pecans

In a small bowl, mix yeast, sugar and water and allow to rest about 5 or 10 minutes, until foamy.

Place flour, baking powder, baking soda, salt and sugar in a medium bowl. Using a whisk, mix well. Set aside.

In a larger bowl, beat eggs with same whisk just to combine. Add oil, vanilla (if using) and buttermilk and whisk to combine well. Add the flour mixture and whisk to combine only, still a bit lumpy. Add yeast mixture and whisk just to combine, still lumpy.

Note: To create a tender waffle, it is important to not over-mix.

Cover and refrigerate mixture overnight.

Bring batter to room temperature and add the chopped nuts. When the waffle iron is hot and lightly oiled with oil spray, add about 1/3 cup batter to each square, depending on your own waffle iron's size.

Serve with warm maple syrup.

Makes 3 batches waffles.
