MEXICAN LASAGNE
1 lb. ground beef
1 med. onion, chopped
1 (12 oz.) jar salsa
1 box taco shells
1 (15 1/2 oz.) can refried beans
2 c. sour cream
8 oz. shredded Cheddar cheese
Shredded lettuce

Heat oven to 350 degrees. Brown ground beef and onion over medium-high heat. Spoon off excess fat. Add 1/2 cup salsa to meat mixture and stir to mix.

Spread 1/2 cup salsa evenly over the bottom of a 10-inch deep dish pie plate. Arrange halved taco shells on top of salsa, overlapping to fit. Top the taco shells with a layer of refried beans, then a layer of meat, sour cream and cheese. Repeat layers, ending with Cheddar cheese.

Cover tightly with foil and bake 30 minutes. Remove foil and top with remaining salsa, additional sour cream and shredded lettuce.

Serves 6.
