CASSIE'S FAVORITE MUSHROOM SOUP 
1 lb. fresh mushrooms
2 med. size onions
2 qts. chicken stock
3 tbsp. rice
4 tbsp. butter
Pepper
1 bay leaf

Slice mushroom caps and dice stems. Finely dice onions. Melt butter 2 tablespoons in large pot. Put in mushrooms and onions. Cover with buttered aluminum foil and place pot cover on pot.

Simmer five minutes. Add additional butter stir until melted. Stir in flour. Add chicken stock. Bring to boil, stirring constantly. Reduce to simmer. Add rice, pepper and bay leaf. Simmer twenty minutes.
