BUTTERMILK CAKE 
1 c. flour
3/4 c. white sugar
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1 egg
1/2 c. buttermilk
1/2 tsp. vanilla
1/3 c. butter, melted and cooled

In a large bowl, stir together dry ingredients and set aside.

Beat egg, buttermilk and vanilla until smooth. Add cooled butter. Add dry ingredients and beat until smooth. Put into a greased and floured pan. Bake at 375 for 20-25 minutes. Top with whipped cream, adding fruit or coconut.
