CARROT CAKE | |
1 3/4 c. oil 4 eggs 2 c. sugar 2 c. plain flour 2 tbsp. cinnamon 2 c. grated carrots 1 c. nuts 1 tsp. baking soda 1 tsp. baking powder 1/4 tsp. salt 8 oz. cream cheese 1 stick butter 1 box powdered sugar 1 tsp. vanilla Blend oil and sugar, add eggs, one at a time (sift flour, baking soda, baking powder and salt in another bowl), add to mixture. Grate carrots very fine, mix into batter and add nuts and cinnamon; mix well. Pour in 3 (9") pans and bake 25 minutes at 300 degrees. ICING: Beat cream cheese, butter, powdered sugar and vanilla. Spread over cooled cake. |
