KITCHENETTE CUPCAKES 
1 1/4 c. plus 2 tbsp. sifted Gold Medal flour
1 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening
2/3 c. milk
1 tsp. flavoring
1/4-1/3 c. unbeaten egg (1 lg.)

Heat oven to 400 degrees. Sift dry ingredients into bowl. Add shortening, milk and flavoring. Beat 2 minutes on medium speed of mixer or 300 strokes by hand. Scrape bowl frequently. Add egg and beat 2 minutes. Pour batter into greased muffin cups or paper cups. Bake 18-20 minutes.
