“SEVEN LAYER COOKIES” IS IN:

SEVEN LAYER COOKIES 
1/2 cup (1 stick) butter
1 1/2 cups graham cracker crumbs
1 (14 oz.) can Eagle Brand sweetened condensed milk
1 cup semi-sweet chocolate chips
1 1/2 cups coconut flakes
1 cup chopped walnuts
1 cup butterscotch chips (optional)

Melt butter in a cake pan. Sprinkle crumbs over butter and pour condensed milk over the crumbs. Top with remaining ingredients in the order given and press down firmly.

Bake at 350°F for 25 minutes or until lightly brown.

The original recipe from 40 years ago differed a little. Yes, the crumbs are just pressed into the butter - they are not stirred together as they would be for a pie crust - just layered on. And two kinds of chips must make them very, very sweet - the original called for a cup of RAISNS rather than butterscotch chips. AND the chips, raisins and coconut are added BEFORE drizzling on the condensed milk Only the chopped walnuts or pecans belong on top of the condensed milk!

What a treat for the tastebuds, never had these before but my husband said they were his favorite growing up. I should have baked longer and crushed the graham crackers by hand, they turned to powder in the ninja. But freezing them helped firm them up. Definitely a rare treat or my pants won't fit anymore.

A size for the cake pan would have been helpful. Seems like not enough for a 9" by 12" so I went a little smaller and had to increase the baking time. Great recipe though.

I've made this recipe for years. I melt the butter in the pan then add a teaspoon of vanilla extract to it, then pour the crumbs in the pan and make the crust, I then add the chips and coconut, then drizzle the sweetened condensed milk over the top, and add a cup of chopped pecans instead of walnuts. Bake at 350°F for 30 minutes.

I made these last Christmas using pecans,instead of walnuts, and I used the butterscotch morsels. My cookies won 1st prize at the cookie swap - hooray!

My grandkids make this recipe. It is easy and delicious. They get to use anything that is in the baking cupboard after the condensed milk. The combinations they come up this is a lot of fun!

I have been looking for this recipe for over eight years. I always made them for Christmas and they were gone by Christmas eve. Great I have been looking for this recipe. I finally googled the right words. I kept thinking they were called 7 layer cookies. Bob Evans had these as a test dessert and they were delicious.
