1 pkg. cornbread stuffing mix
1/4 c. (1/2 stick) butter
1 1/2 c. hot water
1/2 c. chopped green pepper
1 c. chopped onion
2 tbsp. oil
1 lb. hamburger
1 can tomatoes
1 can corn, drained
2 tbsp. chili powder
1 c. grated Cheddar cheese
1 can pitted whole ripe olives

Combine water, butter and seasoning packet in bowl. Add stuffing crumbs and stir just to moisten. Let stand.

Saute green pepper and onion in oil, add hamburger and brown. Add tomatoes, corn and chili powder and stir. Stir in cheese and olives. Place this mixture in 9x13 pan or 3 quart casserole dish. Top with stuffing mixture. Bake, uncovered, at 400 degrees for 30 minutes.

Serves 6-8.
