ORIENTAL SHRIMP SALAD 
Preparation time: 15 minutes. Chilling time: about 2 hours. Serves: 4.

1/2 lb. cooked, peeled, deveined shrimp
1 pkg. (10 oz.) frozen peas, cooked, drained
1 c. finely diced celery

DRESSING:

1/2 c. mayonnaise
2 to 3 tbsp. lemon juice
1/2 tsp. curry powder
1/8 tsp. each onion salt & pepper
1 can (3 oz.) chow mein noodles
1/2 c. salted cashews
Salad greens

1. Cut any large shrimp in half. Put shrimp in large bowl. Add peas and celery.

2. Mix mayonnaise, lemon juice, curry powder, onion salt and pepper. Add to shrimp mixture. Toss thoroughly. Chill for about 2 hours.

3. When ready to serve, add noodles and cashews. Toss lightly. Serve at once with salad greens.

HEALTH NOTE: To reduce fat, calories and cholesterol, use light mayonnaise. Reduce amount of cashews to 1/4 to 1/3 cup.

TIPS: Other seafood such as crabmeat, lobster, etc. or a mixture of seafood can be substituted for the shrimp.
