CHICKEN MARENGO 
2 1/2 lb. chicken
1 tsp. salt
Dash of pepper
4 tbsp. olive oil
1 onion, chopped
1/2 clove garlic, minced
1/2 c. chopped tomato
1/4 c. sherry
2 tbsp. flour

White wine can be used in place of sherry, if desired.

Cut chicken into pieces. Sprinkle with salt, pepper, and flour, and brown in oil. Set aside.

Saute onions and garlic in the same pan. Add chicken and the rest of the ingredients. Cover and simmer until tender (30 to 40 minutes). Serves 6.
