CHICKEN MARENGO 
2 1/2 lb. cut-up chicken
1 tsp. salt
1/8 tsp. pepper
4 tbsp. olive oil
1 chopped onion
1 clove minced garlic
1 c. chopped tomato
1/4 c. white wine
2 tbsp. white flour
2 tbsp. lemon juice
1 c. sliced mushrooms
1/2 c. sliced black olives
1/2 tsp. dried thyme

Sprinkle chicken with salt, pepper, flour, and thyme; brown in oil, set aside. Saute onions and garlic in same pan. Add chicken and rest of ingredients, cover and simmer until tender, about 40 minutes. Serve with noodles or rice. 6 servings.
