MEXICAN RICE | |
2/3 c. chopped onion 3 tbsp. bacon fat 1 c. rice 1 c. chopped green peppers 1 tsp. chili powder 1 c. (16 oz.) whole tomatoes 2 tsp. salt In medium skillet with tight cover saute onion in hot bacon fat. Stir in rice, pepper, chili powder, tomatoes and salt. Add 2 cups water. Bring to boil, then reduce heat and simmer covered 20 minutes until liquid is absorbed and rice is cooked. |
