ZUCCHINI CASSEROLE 
4 c. shredded zucchini
1 tsp. salt
4 eggs
1 c. Cheddar cheese, shredded
1/8 tsp. garlic powder
1/8 tsp. pepper
1/4 c. Bisquick
Green olives, chopped
1/4 c. chopped parsley
1 tbsp. butter

Put zucchini in bowl and add salt and set aside for 1 hour. Then press and drain. Beat eggs. Add Cheddar cheese, garlic powder, pepper, parsley, Bisquick and zucchini. Mix all together. Put in 9 inch square pan and bake 25 minutes (dotted with butter) at 350 degrees. Don't cover. Can garnish with chopped olives.
