ENCHILADA CASSEROLE 
1 lb. ground sausage (mild or hot)
1 lb. lean ground beef
1 med. onion, chopped
1 sm. can refried beans
1 env. Enchilada mix
1 can enchilada sauce (mild or hot)
1 pkg. sm. or medium flour tortilla shells
1 lb. cheese, grated (Colby, Co-Jack, etc.)

Brown sausage and beef, add onion, beans, enchilada mix and sauce. Mix well and simmer 15 minutes.

Layer ingredients in this order in a deep casserole dish. Flour shell, sauce and cheese, repeat until ingredients are used up. Bake at 350 degrees for 30 to 45 minutes or until heated through. Serves 8.
