CHICKEN LASAGNA 
1/2 c. chopped onion
1/2 c. green pepper
2 tbsp. olive oil
1 (10 1/2 oz.) can cream of chicken soup
1/2 c. evaporated milk
6 oz. mushrooms
4 oz. pimiento
1/2 tsp. basil
1/2 tsp. pepper
Sherry
8 oz. cooked lasagna noodles
1 1/2 c. ricotta cheese
3 c. cooked & diced chicken
3/4 c. grated cheddar cheese
1/4 c. Parmesan cheese

Saute onion, pepper and olive oil. Add in chicken soup, milk, mushrooms, pimiento, basil, pepper and sherry. Layer the noodles, sauce, ricotta, chicken and cheese. Bake at 350 degrees for 45 minutes. Serves 8.
