SPICY APPLE PANCAKES WITH CIDER
SAUCE
 
2 c. biscuit mix
1/2 tsp. ground cinnamon
1 egg, beaten
1 1/3 c. milk
3/4 c. shredded apple (about 1 med.)
Cider sauce

Combine biscuit mix and cinnamon in a bowl. Combine egg and milk; stir into dry ingredients until smooth. Stir in shredded apple.

For each pancake, spoon about 1/4 cup batter onto a hot lightly greased griddle. Turn pancakes when tops are covered with bubbles and edges are brown. Serve with Cider Sauce. Yield: 13 (4 inch) pancakes.

CIDER SAUCE:

1/2 c. sugar
1 tbsp. cornstarch
1/8 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1 c. apple cider
1 tbsp. lemon juice
2 tbsp. butter

Combine first 4 ingredients in a heavy saucepan. Gradually add apple cider and lemon juice. Cook over medium heat, stirring constantly until mixture boils.
