TUNA PATTIES 
2/3 c. Grapenuts cereal (not flakes)
1/2 c. milk
1 1/2 c. finely chopped onion
1 tbsp. shortening
2 (7 oz.) cans tuna (drained & finely flaked)
2 eggs, slightly beaten
1/2 tsp. salt, optional
1/8 tsp. pepper
1 tsp. lemon juice
1 tbsp. shortening

Add cereal to milk; set aside. Saute onions in 1 tablespoon shortening until tender but not browned. Add to cereal mixture with tuna, eggs, salt, pepper and lemon juice. Stir to blend thoroughly. Form 12 patties. Brown on both sides in 1 tablespoon shortening. Garnish with parsley, lemon wedges, if desired.

One can (16 ounce) salmon can be substituted for tuna for variety if desired.
