RHUBARB MUFFINS 
3/4 c. brown sugar
1/3 c. oil
1 egg
1/2 c. buttermilk
1 tsp. vanilla
1 c. cut up rhubarb
1 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt

Mix the first 5 ingredients together. Then add the rhubarb, flour, soda, and salt. Mix and pour into muffin tins. Put topping on. Bake at 350 degrees for 15-20 minutes.

TOPPING:

1/4 c. brown sugar
1/2 tsp. cinnamon
1/2 c. chopped nuts

Put 1 teaspoon on each muffin.
