CHICKEN, BROCCOLI CASSEROLE 
1 (6.9 oz.) box chicken flavor Rice-a-Roni
1 (10 oz.) pkg. frozen broccoli cuts
1 c. diced cooked chicken breast (or more)
1 (10 3/4 oz.) can cream of mushroom soup
1 c. milk
1/2 stick butter, melted
1/4 c. Cheddar cheese (more is better!), grated

1. Make Rice-a-Roni as directed on box. Cook and drain broccoli as directed on box.

2. Place rice mixture in a 1 1/2 or 2 quart casserole dish.

3. Mix cream of mushroom soup, milk, melted butter and chicken; layer on rice. Place broccoli on that.

4. Top with grated cheese.

5. Bake about 40 minutes, uncovered at 350 degrees. You may add buttered bread crumbs and bake at 300 degrees an additional 15 minutes. Serves 6.
