ARTICHOKE APPETIZER FRITTATA 
2 (6 oz.) jars marinated artichoke hearts, undrained
3 green onions, chopped
1 clove garlic, crushed
4 lg. eggs
1/8 tsp. pepper
2 c. (8 oz.) sharp cheddar cheese, shredded
6 saltine crackers, crumbled
2 tsp. fresh parsley, chopped

Drain artichoke hearts, reserving liquid. Chop artichokes, and set aside. Pour liquid into a 9" skillet; add green onion and garlic, and cook until tender. Drain.

Combine eggs and pepper in a large bowl; beat mixture well. Stir in artichokes, onion mixture, cheese, crackers, and parsley. Pour mixture into a greased 8" square baking dish. Bake at 325 degrees for 35 to 40 minutes or until set. Cut into 1 1/2" squares.

Makes 2 dozen.
