OAT BRAN & RAISIN MUFFINS 
2 c. 100% oat bran, uncooked
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 c. skim milk
1/3 c. honey
1/2 c. salad oil
2 egg whites
1 c. dark seedless raisins

About 40 minutes before serving, preheat oven to 425 degrees. Place paper liners in 2 1/2 x 1 1/4 inch muffin pan cups.

In large bowl, mix first 4 ingredients. In small bowl, beat milk, honey, oil, and egg whites until blended; stir into oat bran mixture just until oat bran is moistened. Fold in raisins.

Spoon batter into cups to come almost to top of each cup. Bake 20 minutes or until toothpick inserted in center of muffin comes out clean. Immediately remove muffin from pan; serve warm. Or cool on wire rack. Makes 12 muffins.
