DEER SAUSAGE AND HOMINY 
1 lb. deer sausage
Chopped onion
Celery
Hot sauce
Oregano
Paprika
1 can yellow hominy
2 c. shredded Monterey Jack cheese

Brown meat with chopped onion and celery; drain. Add hot sauce, oregano, and paprika; saute for 5 minutes. Pour in baking dish. Layer hominy and cheese over meat. Bake 20 minutes. Cover with additional cheese and melt.
